Pancake Tuesday Recipe and the city's best pancake places

Pancakes have apparently been delighting bellies since the Stone Age. Luckily, they’ve remained a relatively foolproof crowd pleasure that has stood the test of time. In preparation for Pancake Tuesday, we’ve pulled together an easy peasy pancake recipe. Get some topping inspo from the local cafes below, or head on over to pop your feet up to be treated to something a bit spesh.

INGREDIENTS

2 cups all-purpose | plain flour

4 teaspoons baking powder

1/4 teaspoon baking soda

1/2 teaspoon salt

1 1/2 cups milk (plus up to 1/4 cup extra if needed)

1/4 cup melted butter

2 teaspoons pure vanilla extract

1 large egg

METHOD

1. Combine dry ingredients in a large bowl and mix - flour, baking powder, baking soda and salt.

2. Whisk wet ingredients separately - milk, cooled melted butter, vanilla extract and egg.

3. Make a well in the middle of the dry mixture and gently fold wet ingredients until smooth (add extra milk if you find the batter is too thick).

4. Heat and grease your non-stick pan with a little butter.

5. Pour 1/4 of a cup of batter into the pan. When bubbles appear on the surface and the underside is golden, flip with a spatula until both sides are golden.

6. Repeat with the rest of the batter.

7. Top with generous amounts of all your favourite toppings and enjoy!
